According to the findings of an agricultural treatise, the maximum shelf life of dried raw pistachios in special conditions is 284 days.
Currently, pistachio is one of the most popular nuts among people in different countries, with excellent nutritional value.
According to the Food and Agriculture Organization of the United Nations, Iran is the largest producer of pistachios in the world and this product is the second non-oil export of our country after carpet. Nasser Sedaghat, PhD Student, Faculty of Agriculture, Ferdowsi University of Mashhad Texture, moisture content, water activity, mold and pest control as well as sensory properties of pistachio were studied in the form of a split plot statistical design. The results of these studies showed that the quality of dried raw pistachios during storage in terms of peroxide, free fatty acids, moisture content, vatractivity, mold and pest content and sensory properties (taste, texture and overall acceptance) were appropriate according to existing standards. It has a good durability.
It should be noted that the texture of the instrument method had a good correlation with the results of general acceptance and taste of pistachio by sensory method. The panels are designated for 284 days.
One of the main features of this dissertation is the study of pistachio shelf life studies by modeling and calculating the shelf life of this product in different storage conditions and the use of ASLT technique for shelf life studies reduces the cost and shortens the research time.
The results of this project have paved the way in practice for conducting shelf life studies using ASLT on other foods.
