Changal is a delicious food in Kerman province. It is recommended as a suitable meal for all people of different ages.

INGREDIENTS :

  • Kernel dates taken = about 10 pieces
  • Chopped walnuts = a cup
  • Eaten bread = 4 palms
  • Cumin and black cumin = as desired
  • Oil = as needed
  • Animal butter or oil = optional
  • If desired, cardamom powder, ginger and cinnamon = each in small amounts

INSTRUCTION :

To make it, you have to pour some oil or butter in a pan to heat it. Then fry the taken kernels in it. While frying the dates, add the chopped walnuts and continue to fry until the dates change color, then add the said cumin and spices along with the chopped bread to the dates. Stir until the oil is absorbed by the bread.

At this stage, remove the pan from the heat and after the ingredients have cooled a bit, knead it by hand and shape it into small balls. If you like, you can add a little coriander seeds and fenugreek seeds to make the warm nature of dates and walnuts a little cooler. Pour a little coconut or pistachio powder on the balls and place it in the desired dish.
