Ardabil chicken chighitimay omelette recipe in Iran

INGREDIENTS :
- Boneless chicken thigh = 3 pcs
- Medium onion = 1 pcs
- Butter = 3 tablespoons
- Coarse tomatoes = 4 pcs
- Eggs = 3 pcs
- Salt = as needed
- Red and black pepper = as needed
INSTRUCTION :
Chop the onions and fry in liquid oil until golden. Transfer the onions to another bowl. (For example, reduce the heat) and add the butter to the pan and fry the chicken for 10 minutes on each side.
Now add red pepper, salt, peeled tomatoes, chopped jewels and hot onion. Try to use soft and juicy tomatoes, otherwise you can dissolve a spoonful of paste in hot water in addition to tomatoes and add it to the mixture.
Allow the food to boil over high heat without putting it in the pan, and after boiling, place it in the pan and reduce the heat to cook the food over a gentle heat.
When it reaches the desired concentration (not watery), break the eggs in a bowl, stir with a fork until the yolks and whites are mixed. Add black pepper and salt and pour very gently on the mixture. Do not shake the egg or pour it with a spoon after pouring it on the food.
Place the egg in the same dish to harden and heat it with a very gentle heat. Then put the food in a dish and pour a little sauteed parsley on the food and serve with vegetables and bread or rice.
