Duck kebab sauce recipe in Gilan from Iran

INGREDIENTS :
- Salt, pepper and turmeric = as needed
- Oil = 1/3 cup
- Cherry paste = 60 grams
- Pomegranate paste = 80 grams
- Garlic = 2 cloves
- Chives = 150 grams
- Onion = 1 piece
- Walnut = 100 grams
- Sour pomegranate = 100 grams
- Blue eryngo = 100 grams
- Froriepia subpinnata = 100 g
- Fenugreek = 100 grams
- Coriander = 100 grams
- Mint = 100 grams
- Desert mint= 250 grams
- Parsley = 250 grams
Ingredients in duck belly:
- Salt and pepper and turmeric = the amount needed
- Water = 4 cups
- Oil = 1/4 cup
- Garlic = 3 cloves
- Onion = 1 piece
- Duck (small) = 1 piece
INSTRUCTION :
First, boil the duck in water for 15 minutes to eliminate the stench.
Then, in a pot, first fry the duck with its own oil and then boil it with four cups of water, salt, pepper, turmeric and onion, then chop all the vegetables and fry them on the heat. Add the grated onion and garlic to the vegetables and again.
Add ground walnuts, pomegranate, pomegranate paste and cherry paste, salt, pepper, turmeric and a little oil and fry all ingredients well.
Now take the boiled duck out of the water and fry it in oil. Then pour all the prepared ingredients into the duck belly.
Cook the stuffed duck in a saucepan with a little water left over from the duck over low heat. After cooking, put it in a serving dish and decorate the duck as desired.
Other points
1) Most of the vegetables in this food are Gilani and can be found in special places. If you do not have them, remove them and use more of the vegetables you have.
2) Instead of other pastes, you can use sour pomegranate paste.
3) It is better to cook this food with butter to make it more delicious.
